Historique
Possédé en 1649 par Bernard de La Font, seigneur de Caragoudes et conseiller du roi au Parlement de Toulouse, il devient en 1769 la propriété de la famille Jonquières et le restera jusqu'en 1963. Le moulin à farine de La Paillasse est de type tour, de forme légèrement tronconique, et construit en brique du pays, sur une assise en appareil mixte, de moellons et de brique. Représentatif du Lauragais, il conserve des mécanismes en partie de la fin du 18e siècle : deux paires de meules en rez-de-chaussée surélevé, le système de soutien et de régulation en soubassement ainsi que l'ensemble des éléments d'entraînement des meules jusqu'à l'arbre moteur, dont une pièce porte la date de 1796. Définitivement arrêté peu après sa protection, une des premières du genre, résultat d'une prise de conscience de l'intérêt ethnologique de sa conservation, sa toiture a été refaite au début des années 1960 et la tour consolidée en 1993.

History
Owned in 1649 by Bernard de La Font, Lord of Caragoudes and royal counsellor at the Parlement of Toulouse, it became in 1769 the property of the Jonquières family and remained so until 1963. The flour mill of La Paillasse is of tower type, of slightly truncated conical form, and constructed in local brick, on a base of mixed masonry of rubble stone and brick. Representative of Lauragais, it preserves mechanisms partly from the end of the 18th century: two pairs of millstones in raised ground floor, the support and regulation system in the basement as well as all the elements driving the millstones up to the motor shaft, one piece of which bears the date 1796. Definitively stopped shortly after its protection, one of the earliest of its kind, resulting from a growing awareness of the ethnological interest of its preservation, its roof was redone in the early 1960s and the tower consolidated in 1993.
