Anciennement aménagé, le site hydraulique de l'usine de pâtes alimentaires d'Albi, ou Moulins Albigeois, occupe les assises d'un moulin à farine susceptible de dater du 12e siècle, arrimé à une chaussée exploitée depuis le Moyen Age. Transformé au 17e siècle avec la construction de l'hôtel de la Vache rouge (rue Porta) , le site a été remanié entre 1703 et 1739, augmenté dans les années suivantes (grands bâtiments, le long de l'ancienne ruelle de Rives) , encore accru en 1828 (magasin à blé, avec date portée) , et transformé en usine de pâtes alimentaires, avec la construction en 1850 de la vermicellerie proprement dite. Archétype des constructions en brique du 19e siècle, l'usine est aux couleurs de la cité (prouesse technique des balcons). Elle déployait ses équipements et ses machines sur plusieurs étages. Il reste le soubassement des séchoirs à pâtes. Des constructions annexes ont été ajoutées entre 1891 et 1900, suivies de nouvelles extensions au nord de l'ancienne ruelle de Rives en 1940. Depuis la cessation d'activité, l'usine est réhabilitée (hôtel, musée) et partiellement lotie.

History
Formerly developed, the hydraulic site of the pasta factory in Albi, or Moulins Albigeois, occupies the foundations of a flour mill that could date from the 12th century, moored to a weir exploited since the Middle Ages. Transformed in the 17th century with the construction of the Hôtel de la Vache rouge (rue Porta), the site was remodelled between 1703 and 1739, enlarged in the following years (large buildings, along the former ruelle de Rives), further enlarged in 1828 (grain store, with date inscribed), and converted into a pasta factory, with the construction in 1850 of the vermicelli mill proper. Archetype of 19th-century brick construction, the factory bears the colours of the city (technical achievement of the balconies). It deployed its equipment and machines over several storeys. There remain the foundations of the pasta drying rooms. Ancillary buildings were added between 1891 and 1900, followed by further extensions to the north of the former ruelle de Rives in 1940. Since ceasing activity, the factory is being rehabilitated (hotel, museum) and partially divided into plots.
