Il s'agit d'un édicule en moellons avec un contrefort en maçonnerie situé près de l'usine sucrière de l'Eperon. Le fonctionnement et les origines du Bain-Boeuf sont à relier à la problématique de la gestion de l'eau à Saint-Gilles. La ravine Saint-Gilles constitue un élément essentiel dans le développement des plantations sucrières de Saint-Paul. Au 19e siècle, un barrage est construit dans la partie haute de la ravine alimentant par un système de pompes et de canaux quatre usines dont celles de l'Eperon. Une pompe actionnée par une roue à aube refoule l'eau vers l'usine et permet également d'alimenter le Bain-Boeuf de l'Eperon. L'utilisation massive de l'eau de la ravine Saint-Gilles explique que l'on ait réalisé une structure spécifique pour le lavage des bœufs. De nombreux enclos sont visibles au début des années 1950. Dans cette période de création des Sucrerie de Bourbon, il faut acheminer la canne des terrains dépendant du domaine de l'Eperon vers Savanna. Ce flux en période de récolte doit être soutenu d'où un nombre important de charrettes assurant cette liaison vers l'usine.

History
This is a small building of rubble stone with a masonry buttress located near the sugar factory of l'Eperon.
