History

The town of Saulieu, located on a heavily frequented route, developed a reputation as a welcoming destination at the origin of the establishment of numerous inns. In the 18th century, Saulieu, which enjoyed an important relay station for stagecoaches, was definitively recognized as a major centre of gastronomy. In 1926, the creation of the Michelin guide and its famous stars favoured the highlighting of two restaurants, including that of La Côte-d'Or, acquired by Paul Budin, a modern hotel of the early 20th century, which then received its first star. The restaurant was awarded a second star in 1931 then a third in 1935 under the direction of the celebrated chef Alexandre Dumaine. Bernard Loiseau bought the restaurant in 1982 and then undertook to refurbish the premises by adding a storey, nevertheless preserving the room at the corner of the two streets, called the Alexandre Dumaine room. Its arrangement probably dates back to the first quarter of the 20th century if one refers to the patterns of the ceramic tiling.
