Geoffroy III, seigneur de Pons, le reconstruit (donjon). Au 13e siècle, la ville s'organise autour de l'édifice, entourée de remparts (achevés vers 1230). Devenu un fief huguenot, Pons est assiégé et attaqué en 1570 et 1574. En 1598, devenu place de sûreté, Pons va recevoir une nouvelle fortification autour du donjon et les gouverneurs vont reprendre les remparts existant. En 1621, la ville se rend et le démantèlement de toutes les défenses est ordonné. Le château est en partie rasé. De 1623 à 1670, des travaux sont entrepris pour remonter le château arasé de ses tourelles et courtines. Un édifice étroit fut construit à l'aplomb de la falaise, sur la base des remparts et des anciennes caves, étressillonés par de grandes arcatures.
