Fondée en 1152, érigée en paroisse en 1217, l'église est brûlée en 1419 et reconstruite puis consacrée en 1492 (style gothique flamboyant). L'édifice est agrandi en 1531 puis pillé pendant les troubles religieux. Pour organiser sa défense, la ville de la Rochelle, place forte protestante, construit ses fortifications en prélevant des pierres aux églises et aux maisons. De Saint-Sauveur, il ne reste que le clocher et le porche, effondré en 1573. La reconstruction de l'église est entreprise à partir de 1635. En 1660, installation de la confrérie de Jésus. En 1705, un incendie détruit à nouveau l'édifice. De 1706 à 1717, reconstruction du choeur et de la première travée. En 1777, réfection des voûtes en briques sur les bas-côtés et au-dessus de la tribune. Seul le clocher est d'origine médiévale. De plan trapézoïdal, la tour conserve sur ses côtés des traces d'arrachement d'un porche flamboyant. Le portail est d'une structure classique (colonnes corinthiennes, niches, entablement...). Le reste de l'édifice est de plan rectangulaire, à chevet plat, composé d'une nef et de bas-côtés voûtés de croisées d'ogives et de voûtes d'arêtes.
