Le site fortifié est mentionné à partir de 1063. Dépendant des domaines des comtes de Carcassonne, Couffoulens fut adjugée en 1215 à Simon de Montfort et attribuée à l'un de ses lieutenants, Pierre de Voisins. La majeure partie de la construction actuelle remonterait à 1715. A la Révolution, le bien est confisqué et vendu. Le château occupe une vaste surface au sommet du mamelon. Les bâtiments en U encadrent un terre-plein central où s'ouvre, axialement, l'entrée principale. Des fouilles ont permis de retrouver les anciens soubassements des murailles primitives et de silos contenant divers vestiges médiévaux. La construction médiévale englobée dans ces enceintes primitives se compose essentiellement d'une puissante tour carrée, à l'angle sud-ouest du château, des murs méridionaux et orientaux qui ont été conservés comme façades et d'un mur parallèle à la façade méridionale, englobé comme mur de refend dans la construction du 18e siècle. La salle basse de la tour est voûtée en berceau suivant un axe nord-sud. La voûte est en appareil moyen avec les crochets habituels scellés dans l'axe pour suspendre les vivres. Les deux fenêtres latérales, qui s'ouvrent à l'ouest, sont au-dessus des naissances de la voûte. Les pénétrations qui en résultent sont appareillées correctement. The medieval construction enclosed within these primitive enclosures consists essentially of a powerful square tower, at the south-west corner of the castle, of the southern and eastern walls which were retained as facades and of a wall parallel to the southern facade, enclosed as a partition wall in the 18th-century construction. The lower hall of the tower is vaulted in barrel vault along a north-south axis. The vault is in medium ashlar with the usual crochets set in the axis for suspending provisions. The two side windows, which open to the west, are above the springing of the vault. The penetrations resulting from this are correctly coursed. This stereotomic work, rare in the Middle Ages, could be merely a simple repair from the 16th century, the period when gun-ports were arranged at various points on the four facades.
