Cet édifice, à vocation technique, achevé en 1900, fut réalisé selon les plans de l'architecte Ernest Piquart. En produisant de façon industrielle des greffes, il sauva le vignoble champenois menacé par le phylloxéra. Il assuma également es fonctions de laboratoire d'oenologie et d'école de viticulture. La façade principale est ponctuée par trois pavillons en saillie; deux sont situés à chaque extrémité, le troisième occupant la place centrale. Au nord, le pavillon abrite le laboratoire d'oenologie. L'aile qui le relie au pavillon central est une grande salle servant au greffage. L'aile sud est l'ancienne chambre chaude précédant le pavillon sud qui est une serre. Les trois pavillons reflètent chacun leur fonction grâce aux matériaux employés (le métal et le verre pour la serre) ou grâce à l'organisation des ouvertures sur la façade (une porte cintrée monumentale avec balcon pour le pavillon central, sans doute administratif, et trois baies géminées pour le pavillon nord dévolu à la recherche). Le décor extérieur s'harmonise avec le décor intérieur, les fleurettes terminant la retombée des arcs en briques correspondant aux bras de lampes très décoratifs des salles intérieures. Les épis de faîtage des pavillons sont également travaillés.

This building, with a technical purpose, completed in 1900, was realised according to the plans of architect Ernest Piquart. By producing grafts in an industrial manner, it saved the Champagne vineyard threatened by phylloxera. It also assumed the functions of an oenology laboratory and viticulture school. The exterior decoration harmonises with the interior decoration, the small flowers terminating the springing of the brick arches corresponding to the highly decorative lamp arms of the interior rooms. The roof finials of the pavilions are also worked.
