Ce fief seigneurial vassal de Pézenas est mentionné en 1100.Conas est rattaché à Pézenas depuis le 15e siècle. La proximité de l'Hérault favorise l'implantation de moulins à grains dès le Moyen Age. Les origines de celui de Conas pourraient remonter au 12e siècle. Les premières mentions datent de la fin du 13e siècle. En 1791, le moulin est vendu comme bien national. L'ouvrage se compose de deux tours massives de meunerie, de plan oblong, augmenté d'un éperon aval, bâties en calcaire coquillier dur. La construction résulte de plusieurs campagnes. Les bases sont médiévales (14e ou 15e siècle). L'entrée à l'ouest était protégée par quatre mâchicoulis à arcs portés par des corbeaux à ressauts. Des reprises et adjonctions s'échelonnent vraisemblablement du 16e au 17e siècle. La date de 1728 inscrite sur l'assommoir, pourrait correspondre à des travaux de réaménagements. Au début du 19e siècle, le moulin est utilisé pour l'irrigation, avec turbine et pompe. La façade sud a été en partie surajoutée et surélevée.
