Construit entre 1853 et 1855 par l'architecte de la Régie André Weyer pour remplacer d'anciens magasins, aménagés dans le château des évêques de Strasbourg, qui ne suffisaient plus, le centre de fermentation permettait de réceptionner la récolte des planteurs avant le traitement final à la manufacture d'Obernai. Sur quatre niveaux et sur cour fermée, ce quadrilatère homogène est décoré de bandeaux et de baies en plein-cintre en grès rose et en brique. Un grand bâtiment de préparation est complété par un bâtiment administratif. L'ensemble a été racheté par la commune en 1988 après cessation d'activité.

History
Constructed between 1853 and 1855 by the architect of the State Administration André Weyer to replace old warehouses, fitted out in the château of the bishops of Strasbourg, which were no longer sufficient, the fermentation centre allowed for the reception of the planters' harvest before final processing at the Obernai manufactory. Over four levels and on a closed courtyard, this homogeneous quadrilateral is decorated with bands and round-arch openings in pink sandstone and brick. A large preparation building is completed by an administrative building. The whole was purchased back by the commune in 1988 after cessation of activity.
